Nachos, But Make It Healthy
It seems like the entire country is cold and buried in snow, and we know how that can mean we are all craving comfort food! This is one of our fave cozy weather recipes. Double or triple it and throw an egg over for breakfast.
We always wing it, so use what you have & whatever toppings you like.
What you need:
• 2-3 large sweet potatoes
• olive oil
• organic cheddar/mozzarella
• ALL THE TOPPINGS: avocado, tomatoes, red onion, cilantro, salsa, black beans, olives, jalapeños, chili powder... go wild
• salt & pepper
What to do:
1. thinly slice sweet potatoes and coat with olive oil, salt & pepper. Put in an even layer on a baking sheet w parchment paper (helps w mess) and cook at 425* F, 20-25 min. I flip them ¾ the way thru to make sure they are evenly chippy
2. Take out of the oven and let them sit for a few min to crisp up
3. Pile them up (overlapping) either back on the baking sheet or a cast iron skillet for serving
4. Top with a lot of cheese, red onion, black beans.. any of the toppings that need a little heating
5. Throw back in the oven for 4-5 min til cheese is melty happiness
6. Remove from oven and add all the other toppings 🥑 🌿
7. Dig in 😋
